Artisan does not mean machine-free
An artisan workshop uses tools and machines. What matters is how the pasta maker prepares the ingredients, adjusts the equipment, watches the dough and intervenes throughout production.
A machine supports a technique
A roller, cutting system or dryer each answers a precise production step. In this section we will progressively enter the workshop and explain their role using the equipment actually used by Pasta Piemonte.
Observe before automating
A machine can make a technique more regular, but dough remains a material that must be observed. Artisan work means keeping direct control over production and the final result.
