What does “artisan pasta” really mean?

The word “artisan” is everywhere. For consumers, what matters is understanding what it actually means behind a fresh pasta product.

WHAT FRENCH LAW SAYS“Artisan” is a regulated professional status.

Under the French Code de l’artisanat, a person in the craft sector may claim artisan status when they can demonstrate a diploma, recognised qualification or professional experience in the trade they practise. Article R211-1 specifies, among other routes, at least three years of professional experience in that trade.
